Byakuya unleashed his Bankai as soon as he saw how dangerous the enemy was. The Shinigami knew that the Quincy could "seal away" Bankais, but the captain believed he needed to risk it. Other captains, seen in the end card, agreed.
Renji watched Byakuya's opponent steal the captain's Bankai. And used it back on its owner! That problem didn't matter as much to Kenpachi because he never learned how to create a Bankai. Because of that, the Quincies had declared Zaraki a "special threat." Ichigo was another threat because they couldn't steal his Bankai! Byakuya took a turn in the end card.
