The look on Holo's face as she looked at the full moon and expressed her desire to return to her northern homeland convinced Lawrence to take her there. The prologue makes it clear he did.
The funniest part about the original run of Spice and Wolf was how much Holo liked apples. I'm glad it will become a running joke in the reboot.
